Certified Organic w/ biodynamic principles. Grüner Veltliner (60-70%), Scheurebe (30-40%). Sourced from the Kreuthern vineyard in Loidesthal on chalky loess. Destemmed, semi-carbonic spontaneous skin fermentation on the skins in stainless steel for 7-10 days (Scheurebe berries were added 2 days after Gruner Veltliner), and then 2 more weeks hanging out on the skins after fermentation ended. Gently pressed into a 600-liter Acacia barrel, a 500-liter oak barrel, and a small formal oak barrel. After 5 months, the three barrels were blended into a 1300-liter Fass and aged for another 2 months. 15mg total sulfur added at bottling.
