Vaimaki Family - Popolka red 2021

100% Xinomavro. “Vaimaki Family” is the urban winemaking project of oenologist Vasilis Vaimakis. An oenologist with vast winemaking experience, Vaimakis is also one of the first oenologists of Greece who explored the limits of natural vinification of Greek grapes with zero sulfites. The elderly around Amyndeo (Macedonia) still call it “Popolka”, the actual name of Xinomavro before the 70’s. A natural, zero-zero red Xinomavro, from its birthplace in the lake terroir of Amyndeo, from the master of its kind, Vasilis Vaimakis. From organically farmed Xinomavro grapes, fermented by their native yeast with some temperature control in stainless steel tank, a few days of maceration, 30-day fermentation, and raised for 12 months in oak barrels, before bottled unfiltered, unfined, unsulfured (zero additives). Dark brick red with intense gooseberries and leather notes on the nose and hints of hay, with a surprisingly clean palate and playful tannins.
