Slavcek, Sivi Pinot 2021

100% Pinot Grigio. Organic. Slavcek is the name of an old winery in the Slovenian Vipava Valley, whose origins can be traced back to 1769. Now managed by Franc and Alenka Vodopivek, the vineyards benefit from natural agriculture practices, without any use of chemicals and with the utmost attention and care of the plants. A short 5 day maceration on the skins, aged in old barrels and stainless steel (50/50), and bottled unfined and unfiltered.
