60% Chenin Blanc, 40% Chardonnay. Certified organic. Pierre Bories makes wine in Corbieres in the Languedoc, maybe not the place you might expect to find a zippy Chenin based blend, but here we are. Hipolyte, named after their son, is fresh and fruity, with a touch of green apple tartness and a rich mouthfeel.
