Mostly Melon de Bourgogne with a touch of Sauv Blanc. Certified organic. Philippe Chevarin could be making Muscadet, but he declassifies the wine to Vin de France. Working as naturally as possible, his wines have a thrilling liveliness to them. Le Souffle is herbacious, mineral and a touch sauvage with a creamy texture from aging on the lees (in fiberglass).
