Lucy Pistolas Mezcal Artesanal

100% Agave Salmiana. La Ventilla in San Felipe is one of two tiny regions in Guanajuato that produce mezcal. Centuries-old above-ground ovens highlight the bright, herbal and floral qualities of 10-12 year agave salmiana. The agave piñas slow cook in these ovens for three days before extracting their juice. Quite a distinct style of mezcal, herbs and bell pepper on the nose, crunchy and snappy agave fruit on the palate and an absence of smoke.
