100% Cabernet Sauvignon. Organic. Andrew and Louise are located in Mount Gambier, which is about half way between Adelaide and Melbourne. Very remote. They planted their own organically managed vineyard, but for now still source fruit for their various cuvees. The Cantina is all Cabernet, destemmed and given a quick 2 day, whole cluster maceration.Bright, super fresh acidity with deep cherry fruit. Firmly in the glou glou camp, and deserves a chill.
