85% Trebbiano Spoletino, 15% Grechetto. Certified-biodynamic. From vines planted from 1999-2008 on the estate's typical heavy clay soils with limestone. The bunches are harvested by hand and immediately destemmed and co-fermented spontaneously and with no sulfur or temperature control in open-topped vats (tini). There is a two-day maceration before a gentle pressing off of the skins and continued fermentation to dryness. It is bottled without any sulfur or filtration.
