Certified organic. 100% Chardonnay. Younger vines on a half-hectare parcel with western exposure at 400m and with a higher percentage of limestone. Hand harvest, whole bunch pressed into stainless steel vats for a natural fermentation. 8 months on lees. Unfined, unfiltered, minimal SO2. ‘Atout Vent’ refers to a place in altitude stirred by the wind.
