Day Wines, Chardonnay 'Eola Springs Vineyard' Willamette Valley 2021

100% Chardonnay. Excited for the first vintage of a new cuvee from the talented Brianne Day in Oregon. Eola Springs Vineyard, an important historic site was first planted in the early 1970s. The vines for this cuvee were planted in 1996 & 2007. A cooler vineyard site, it's dry farmed with no tilling and no use of herbicides. The fruit was direct-pressed and naturally fermented in a mix of different sized barrels (30% new), and the wine aged for 18 months before being racked to stainless steel for one month before bottling. Creamy, with layers of texture and un underlying core of minerality.
