100% Ribolla Gialla. Organic. A disciple of the great Josko Gravner, Damijan pursues natural winemaking, using only old wood to ferment and age the wines. The fermentation takes place in the presence of the skins in the conical section oak casks for 60-90 days. After the soaking, it is aged in barrels for 3 years and aged in the bottle for one year.
