40% Trousseau/20% Poulsard both hand destemmed and spend 3 months maceration in foudre. 40% Pinot Noir done whole cluster with 1 months maceration in foudre. Using foudre (gigantic wooden barrels) allows long maceration without any oxidation in order to preserve the fruit. Bottled & vinified without any sulfur, filtering or fining in May 2021. Certified organic/Biodynamic.
