100% Assyrtiko. Turns out the appeal of Assyrtiko, the mineral driven white that originated on the island of Santorini, has spread to Crete. Both islands have ancient wine cultures, and the high elevation vineyards here give a rich, flinty texture and a crisp elegant fruitiness. Tank fermented and aged on the lees for 3 months before bottling.
