The average age of the vines are about 29 years Carignanm 21 years Syrah, 13 years Mouverdre, and 10 years for Grenache. All are planted on clay and limestone soils and are hand-harvested in early September, de-stemmed, with spontaneous fermentation with native yeasts lasting 3 weeks. The wine is then moved to a vat for ten days before being moved to age 70%in tank and 30% in barrel for about 10 months. At this point, a minimal amount of S02 may be added to stabilize the wine, depending upon the vintage. A lighter style for the Languedoc, drinking medium-bodied and dry with spice, summer berries, bright acidity, and a pleasant, long finish.
