100% Sumo Negre Vermell. Viticulture is conducted organically, with an emphasis on biodiversity and environmental preservation. No herbicides or pesticides are used, and sulfur is only applied when necessary, along with composting and soil covering. Manuel harvest takes place at the end of September, followed by a rigorous selection of grapes before vilification. The fermentation process occurs in clay amphorae, where natural indigenous yeast play a fundamental role. After fermentation, the wine is aged in clay amphorae and French oak barrels for six months, without clarification or filtration.
