100% Gamay. Franck Besson is an ex-history and biology professor who took over his father-in-laws estate located in town of Julie in Beaujolais-Villages at the foothill of Cru Julienas. Revolted by the poor image that was being associated with Beaujolais villages wines, Franck Besson decided to innovate and produce Rosè and Blanc de Noir sparkling wines to prove the potential of Gamay grapes on the granitic slopes of Beaujolais. Organic and hand harvested. Gamay from vines over 40 years old with steep southern exposure in pink granite soils. 350 meters elevation. Direct, whole cluster pressing of grapes, 6-12 skin contact with first fermentation in stainless steel tank for the "vin de base". Traditional method vilification and aged 12 months on wooden "pupitre" at the estate. Riddling for 12 days. 10g/l dosage.
